The Galling-Basah process is unique to Sumatra and results in a deep blue or green hue to the raw coffee. This creates a special cupping profile.
The process involves three steps, depending on moisture content. ‘Gabah’ is when wet parchment coffee is dried immediately and hulled. ‘Labu’ is for wet green beans at about 30-40 per cent humidity. The third step is ‘Assalan’, exported at 12-13 per cent humidity.
The coffee is grown at altitudes between 1,200m and 1,600m high in the north west of Sumatra. It’s one any enthusiast would want to get their hands on.
